Muesli Fruit and Nut Slice
Ingredients
¼ cup honey
100 grams margarine
¼ cup low fat peanut butter
½ cup apple puree
¾ cup rolled oats
2 cups Rice Bubbles
4 Weet-Bix crushed
1/3 cup sesame seeds
½ cup dried fruit (e.g. apricots, dried figs – chopped, sultanas)
¼ cup sliced almonds, toasted
Method
Line a 18cm x 27cm slice tin with baking paper
Melt together honey, margarine and peanut butter
Then stir through the apple puree and mix together
In a large bowl combine the oats, cereals, sesame seeds, dried fruit and almonds
Add the honey mix to the dry cereal mix and combine well
Press mixture into tin and smooth top with the back of a large metal spoon
Cover and place in refrigerator for an hour or until set, then cut into 20 slices
