1 2/3 cups self-raising flour, sifted
3/4 cup brown sugar
125g butter, melted
2 eggs, lightly beaten
1/4 cup milk
1/4 cup brown sugar, extra
1 tsp vanilla extract
Mixed fresh fruit, to serve.
Preheat oven to 190°C/170°C fan forced. Grease a Baker’s Secret Flan Pan well with oil spray.
Place the flour in a large bowl and make a well in the centre.
Whisk together the brown sugar, butter, eggs and milk in another bowl. Pour into the flour and stir with a large spoon or spatula until just combined. Pour the mixture into the prepared Flan Pan.
Bake for 20-25 minutes or until cooked through. Remove from oven and cool in pan for 5 minutes before transferring to a wire rack.
While the Flan is cooling, combine the mascarpone, extra brown sugar and vanilla. When fully cooled, spoon the mascarpone mixture into the middle.
Top with mixed fresh fruit, such as strawberries, blueberries, figs and apricots. Dust with icing sugar if desired.
