Chocolate Brownies


200g soft unsalted butter

200g dark chocolate at least 70%

3 eggs

250g caster sugar

1/2 tablespoon vanilla extract

125 g plain flour

1/2 teaspoon salt

150g walnuts, chopped OR 1 cup of white chocolate chips


Preheat the oven to 180°C or 170°C Fan Forced. Melt the butter and chocolate together over low heat in a saucepan, or in the microwave. Let it cool slightly, about 5 minutes.

In a bowl, beat the eggs, sugar and vanilla together. Beat the egg mixture into the chocolate mixture. Fold in the flour and salt – don’t over-beat! Add the nuts or white chocolate chips.

Pour the mixture into a greased and lined 25cm-square tin. Bake for 25 minutes. They are done to perfection when the top becomes slightly speckled.
