2 cups walnuts, lightly toasted
2½ cups Medjool dates, pitted
1 cup Dutch cocoa, sifted
Zest of 2 oranges finely chopped
1 cup almonds, lightly toasted and roughly chopped
¼ tsp sea salt
Place walnuts in food processor and blend on high until the nuts are finely ground.
Add the cocoa and salt and pulse again to combine.
Add the dates one at a time to the food processor while it is running; you should end up with a mix that looks like cake crumbs but that when pressed, will easily stick together.
In a large bowl combine the walnut cocoa mix with the almonds and orange zest. Roll into balls the size of a walnut.
Place in fridge until ready to serve. Store in an airtight container.
